Gluten Free Avocado Brownie (GF)(VGT)
Turn your ripe avocados into a gluten-free brownie.
Pre-heat the oven to 350 degrees F. Coat an 8x8 oven-safe dish with non-stick cooking oil spray. Mix avocado, eggs, maple syrup, and vanilla extract in a food processor until smooth. Mix almond meal, cocoa powder, and baking soda in a medium bowl. Add dry ingredients in the medium bowl to the food processor, slowly, until smooth. Mix in chocolate chips. Pour the prepared mixture into the prepared oven-safe dish. Bake at 350 degrees F for 30 minutes or until a toothpick inserted into the avocado brownie comes out clean.
How can you modify this recipe?
- Reduce chocolate chips to 1/2 cup or none (if you don't like them in your brownie)
- Increase the maple syrup to 1/4 cup if you'd like it to be sweeter
- Add peanuts, tree nuts, or seeds
