Gluten-Free One-Pot Eggplant and Chicken with Tomatoes (GF)

Ingredients:
 1 lb Chicken Breast, diced
 1 medium Eggplant, diced [approximately 4 1/2 cups]
 2 (14.5 ounce) cans of Diced Tomatoes, no salt added
 1 tbsp Extra Virgin Olive Oil
 1 clove Garlic, minced
 2 tsp Oregano, dried
 2 tsp Basil, dried
 1 tsp Salt
 ½ tsp Onion Powder
Directions:

Preheat oven to 400 degrees Fahrenheit.

Add chicken, eggplant, and tomatoes in a 4-quart cast-iron Dutch oven.

Add in the olive oil, garlic, oregano, basil, salt, and onion powder into the cast-iron Dutch oven.

Mix until well blended.

Cook for 60 minutes or until it reaches an internal temperature of 165 degrees Fahrenheit.

Serving Suggestions:

  • Grains: corn tortilla, gluten-free pasta, polenta, rice
  • Topping: shredded cheese, plain yogurt, or sour cream
