 8 oz Cream Cheese, room temperature
 1 (15 ounce) can Pumpkin Puree
 3 tbsp Maple Syrup
 2 tsp Pumpkin Spice
 1 ¾ cups Almond Meal
 1 cup GF rolled oats
 2 cups Chocolate Chips, semi-sweet
 2 tbsp Coconut Oil
Directions:

Beat cream cheese, pumpkin puree, maple syrup, pumpkin spice, and vanilla extract in a large-sized bowl for 1 minute at medium-high speed or until smooth.

Mix in the almond meal using beater for 1 minute at medium-high speed or until smooth.

Blend in the gluten-free rolled oats using a spatula.

Scoop a ¼ cup of the mixture using an ice cream scooper.

Refrigerate the no-bake chocolate covered pumpkin truffles for 1 hour on a cookie covered with parchment paper.

Melt the chocolate chips and coconut oil using the double-boiler method or microwave after 1 hour.
