No Bake Chocolate Covered Pumpkin Truffles

Ingredients:
 8 oz Cream Cheese, room temperature
 1 (15 ounce) can Pumpkin Puree
 3 tbsp Maple Syrup
 2 tsp Pumpkin Spice
 1 ¾ cups Almond Meal
 1 cup GF rolled oats
 2 cups Chocolate Chips, semi-sweet
 2 tbsp Coconut Oil

Beat cream cheese, pumpkin puree, maple syrup, pumpkin spice, and vanilla extract in a large-sized bowl for 1 minute at medium-high speed or until smooth.

Mix in the almond meal using beater for 1 minute at medium-high speed or until smooth.
